The consumption of parboiled rice in China originated in the Spring and Autumn Period, and records of processing technology appeared in the Song Dynasty: According to the “History of Chinese Agricultural Science and Technology”, in 1101 AD, Sichuan adopted the rice processing method of “steaming first and then frying”, which was the embryo of China’s parboiled rice processing technology.

In the 1990s, parboiled rice, as a processed rice different from brown rice and polished rice, was included in the rice standard of the International Food Codex.
Compared with polished white rice, parboiled rice uses a subversive processing technology. Before the rice is husked, it is treated with a series of hydrothermal processes such as soaking, germination, and steaming, so that the rice can be processed through nutrient reverse osmosis, germ germination, starch reorganization, etc., so that more whole grain nutrition can be retained in the rice grains, and the glycemic index can be reduced, making the product healthier; then the hulling, grinding, polishing, color sorting, etc. are carried out to improve the color and taste of the product.
