1. Special rice

Special rice is a rice product that uses high-quality rice for fine processing. Special rice was mainly exported in my country in the past. At present, domestic sales are developing rapidly, and market demand is increasing. The processing technology and equipment requirements for premium rice are relatively high. In addition to the need to add processes such as removing impurities and sand, separating grains and rough rice, and grading polished rice, the main processing method is to use the advanced process of “multi-machine light grinding to produce white rice”. In recent years, my country’s grain machinery industry has developed a domestic premium rice processing production line based on the introduction, digestion and absorption of foreign advanced technologies. Its processes and equipment have reached the international advanced level in a considerable part, laying the foundation for the rapid development of premium rice production in my country.


Wash-free rice is also called clean rice (broadly including water-milled rice). It is characterized by very little impurities, smooth surface, clean and hygienic, and anti-pollution and quality-preserving packaging. The processing standards of this type of product must basically meet the “four cuts”, namely, cut sand and stone, cut grains, cut barn, and cut bran. It also needs to be processed and packaged in an environment without sanitary pollution, and there are measures to ensure that the rice grains will not be contaminated by sanitary pollution during the shelf life. This product is storable and can be directly steamed without washing when eaten, thus avoiding the loss of nutrients and solids during the rice washing process and saving water for washing rice. The key to processing wash-free rice lies in impurity removal, bran removal, selection and cleaning, which requires corresponding high-standard impurity removal equipment and processes, rice brushing technology and equipment (such as white rice polishing machines, etc.) and white rice selection equipment (such as computer color sorters, etc.). At present, most of the rice supplied in the markets of Japan, the United States, Italy, Australia and other countries is wash-free rice, while in my country, due to poor processing conditions, real wash-free rice is rarely seen on the market.

 

3. Parboiled rice

Parboiled rice is also called half-cooked rice. Its basic processing procedures are the same as those for processing general rice, except that water and heat treatment procedures such as soaking, steaming and drying of clean rice are added before hulling. The rice grain strength increased, the process quality improved, and the broken rice rate decreased after hydrothermal treatment. At the same time, during the hydrothermal treatment process, the nutrients such as vitamins and minerals in the rice cortex penetrate into the rice grains, increasing the nutrients in the endosperm and improving the nutritional value of rice. In addition, parboiled rice has the advantages of storage resistance, good rice grain swelling, high rice yield, and easy digestion. Therefore, 1/5 of the rice in the world is processed into parboiled rice every year. India, Thailand, Somalia and other countries are the main producers of parboiled rice. The United States, Italy and other countries also produce it, mainly to improve the nutritional value and processing quality of rice. Farmers in Zhejiang, Fujian, Guangdong and other places in my country have a long history of producing edible parboiled rice. In the 1960s, a certain scale of parboiled rice production plants were established in Jiangsu, Zhejiang and other places. Their products were mainly exported to Arab countries in the Middle East. Because the color of the rice skin is penetrated by the parboiled rice, it does not have a white appearance like ordinary white rice, so the sales volume in China is not large.

 

4. Germ rice

Germ rice refers to a rice product that retains the rice germ in polished rice, also known as germ-retaining rice, and the germ-retaining rate should be above 80%. Since the rice germ contains vitamins such as vitamin E, B1, B2 and rich nutrients such as high-quality protein and fat, the nutritional value of germ rice is higher than that of ordinary rice. In the processing of ordinary rice, most of the rice germ falls off during the whitening and peeling process of brown rice, so ordinary rice basically does not retain the germ. The processing of germ rice requires special processing technology and equipment. Before whitening and peeling, the brown rice needs to be pretreated with chemical solvents or enzymes to make the rice skin loose and soft, and then a high-speed grinding rice mill is used to grind the rice grains under low-pressure impact to remove the rice skin and retain the germ. Germ rice was first introduced in Japan in 1924, and played a certain role in preventing beriberi, which was prevalent in Japan at that time. In 1977, the Japanese government officially designated germ rice as a rice product. There is no germ rice on the market in my country, and it is not common in other countries. The main reason is that the storage resistance of germ rice has not been well solved. In addition, the rice germ has a special taste and the taste is poor when eating, so it has not been accepted by the majority of consumers.

 

5. Nutritionally fortified rice

Nutritional fortified rice refers to rice with certain nutrients added to the human body. Because the cortex and germ containing various nutrients are milled off during the processing of high-grade rice to improve the accuracy and palatability, its nutritional value is seriously reduced.
